Mediterranean Chickpea Quinoa Power Bowl with Feta
Fluffy quinoa, chickpeas, crunchy cucumber, cherry tomatoes, feta and olives with a lemon-olive oil dressing. A make-ahead lunch bowl that holds up well.
AI imageThis bowl is built for busy weekdays: cook a pot of quinoa, chop a few vegetables, whisk a quick dressing, and lunch is sorted for several days.
It covers the main parts of a balanced plate. Quinoa is a whole grain, and together with chickpeas it adds fiber and plant protein. Cucumber, cherry tomatoes and red onion add crunch, color and plenty of vegetables. Feta and olives bring a salty, savory flavor, and the lemon-olive oil dressing adds healthy fats.
Tips
- Rinse quinoa in a fine-mesh strainer before cooking to remove its natural bitter coating (some brands are pre-rinsed).
- Spread cooked quinoa on a plate or tray to cool quickly, so it stays fluffy and does not wilt the vegetables.
- Soak the sliced red onion in cold water for 5 minutes, then drain, for a milder flavor.
- Make extra dressing and keep it in a jar; it works on salads and roasted vegetables too.
Storage
For meal prep, store the quinoa and chickpeas, the chopped vegetables, and the dressing in separate covered containers in the fridge, and combine just before eating. Assembled bowls are best eaten within a day or two, since the cucumber and tomatoes release liquid. If you add chicken, keep cooked chicken in the fridge and eat it within 3 to 4 days.

Method

Cook the quinoa
Rinse the quinoa in a fine-mesh strainer. Add it to a saucepan with the water and a pinch of salt, bring to a boil, then cover and simmer on low for 15 minutes, until the water is absorbed. Remove from the heat, keep covered for 5 minutes, then fluff with a fork and let cool slightly.

Make the dressing
In a small jar or bowl, whisk or shake the olive oil, lemon juice, garlic, Dijon mustard, oregano, salt and pepper until combined.
- 3
Prepare the vegetables
While the quinoa cooks, dice the cucumber, halve the cherry tomatoes, finely chop the red onion and halve the olives. Drain and rinse the chickpeas and pat them dry.
- 4
Assemble the bowls
Divide the quinoa among 4 bowls. Top with chickpeas, cucumber, tomatoes, red onion, olives and feta.
- 5
Dress and serve
Drizzle with the dressing just before eating and finish with chopped parsley, if using.
Swaps & variations
- Grilled chicken: add 1 lb (450 g) boneless chicken breast or thighs, grilled until it reaches 165°F (74°C), then sliced; you can keep or skip the chickpeas.
- Dairy-free or vegan: leave out the feta and add diced avocado or a spoonful of hummus.
- Different grain: use cooked brown rice, farro or bulgur; farro and bulgur contain gluten.
- Gluten-free: the recipe as written is naturally gluten-free; check labels on the olives and mustard if needed.
- More greens: serve over a handful of baby spinach or chopped romaine.
Frequently asked questions
Can I eat this warm?
Yes. Warm quinoa and chickpeas are lovely with the cool vegetables; just add the feta and dressing right before eating.
Can I roast the chickpeas?
Yes. Toss them with 1 tbsp olive oil and roast at 425°F (220°C) for 20–25 minutes, shaking the pan halfway, for extra crunch.
